Vegetarian lasagne

  1. Put assorted vegetable into boiling water and cook for 8 minutes. Drain the cooked mixture through a sieve and mash with a fork.
  2. Prepare the sauce: fry the flour in the butter, add the broth, milk and cream while stirring, season with salt and pepper, stir and cook until the sauce thickens.
  3. Add a few tablespoons of sauce to the baking dish, add a layer of lasagne sheets, a layer of mixed vegetables, drizzle over the sauce, add a layer of lasagne sheets again, and so on. The top layer must be vegetables. Pour the remaining sauce over them, sprinkle with cheese and bake in an oven at 200oC for 30 minutes.


The lasagne sheets can be slightly cooked before layering the lasagne pie (this is particularly useful if the sheets have to be cut). If you layer the pie with uncooked sheets then add more sauce as the pasta absorbs a lot of liquid when baked.
